Plantain Ceviche
Ceviche is a vibrant dish of raw ingredients that is “cooked” by marinating in citrus juices. This vegan version features plantains that are lightly browned and then tossed with raw vegetables and fresh cilantro. Serve it as an appetizer, a relish, a dip, or a salad.

Makes 4-6 servings
Ingredients

1 pound plantains, sliced

1/4 pound red onion, sliced

1 ounce jalapeno pepper, chopped

2 ounces red bell peppers, sliced

1/2 pound fresh corn kernels

1 ounce scallions, chopped

1 bunch fresh cilantro, chopped

1/3 cup olive oil

1/4 cup lime juice

Salt and pepper, to taste
Directions

Preheat oven to 375 degrees.

Place plantain slices on a sheet pan and roast until slightly browned, about 10 minutes; set aside to cool.

Place remaining ingredients in a large stainless steel bowl and toss well. Adjust seasoning, if needed.

Allow mixture to marinate for at least 20 minutes before serving.
