Green Goddess Dressing

This vibrant salad dressing is brimming with the fresh flavors of herbs, spinach, and lemon juice. Suitable for vegans and vegetarians, the dressing gets its creaminess from tahini. The recipe also makes a great dip for crudités or pita chips, or a sauce for grain bowls.

Makes 6 servings

Ingredients

  • 3 teaspoons lemon juice

  • 1 tablespoon champagne or white wine vinegar

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh spinach, chopped

  • 1 tablespoon fresh tarragon, chopped

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, peeled, minced

  • 1 tablespoon shallots, peeled, minced

  • Sea salt, to taste

  • Ground black pepper, to taste

  • 1 tablespoon sunflower oil 

  • 2 1/2 tablespoons tahini

  • 3 tablespoons extra virgin olive oil

Directions

  1. In a blender or food processor, add all ingredients except oil; mix until well combined.

  2. Lower the speed and slowly add the oil to emulsify the dressing.

  3. Thin the dressing to desired consistency by adding water, a tablespoon at a time.
