Modern nutrition science says that dates are high in minerals, vitamins, antioxidants, and fiber. They're also deliciously sweet and quite filling. Makes 4 stuffed dates
Ingredients

12 Medjool or Deglet Noor dates

Almond Coconut (vegan)
1 1/2 tablespoons almond butter
1 tablespoon coconut flakesSlice 4 dates lengthwise and remove the pit to create a cavity for the almond butter. Stuff dates with almond butter and sprinkle with coconut flakes

Goat Cheese & Chopped Almonds
1 1/2 tablespoons goat cheese
1 handful of chopped almonds
1 teaspoon lemon zestSlice 4 dates lengthwise and remove the pit to create a cavity for the goat cheese. Stuff dates with the cheese and pieces of chopped almonds and sprinkle lemon zest on top.

Tahini Pomegranate (vegan)
1 1/2 tablespoons tahini (sesame seed butter)
1 handful of dark chocolate chips
1 handful of pomegranate seedsSlice 4 dates lengthwise and remove the pit to create a cavity for the filling. Stuff dates with tahini and 1-2 chocolate chips and 2 or more pomegranate seeds.

Serve on a platter by themselves or add them to a cheese and fruit plate for some extra wow factor when hosting guests.
Note: This recipe is easy to double or triple for a large gathering.
