Peach & Lime Salsa

What could be more delicious than fresh peaches? This recipe for peach salsa can be eaten with tortilla chips or used on fish, chicken, or quesedillas.

Ingredients

  • 2 cups peaches, peeled and diced

  • 1 cup red bell pepper, diced small

  • 3 tablespoons red onion, diced small

  • 3 tablespoons fresh lime juice

  • 1 teaspoon lime zest

  • 2 tablespoons fresh cilantro, chopped

  • 1 jalapeño chili, minced

  • 1 teaspoon fresh ginger, minced

Directions

  1. Gently incorporate the ingredients in a bowl and season to taste with salt and freshly cracked black pepper.
