JJ's Spinach-Arugula Pesto
This quick, healthy pesto recipe features good-for-you greens, like spinach and arugula, and healthy fats.

Ingredients

1/3 cup walnuts

1 large garlic clove, chopped

2 cups baby spinach

2 cups arugula
-
1/2 cup mint leaves
-
2 teaspoons champagne vinegar
-
2 teaspoons nutritional yeast
-
1/4 cup extra virgin olive oil

1/4 to 1/2 cup water

Sea salt and pepper
Directions

Place walnuts and garlic in food processor and pulse about 6-8 times, until chopped and blended.

Add spinach, arugula, mint, vinegar, and nutritional yeast. Pulse 8-10 times until well blended. Scrape down the sides, if necessary.

With the motor running, pour in the oil, followed by enough water to reach desired consistency.

Season to taste with salt and pepper.
