Apple & Cabbage Slaw

Apples are crispy, sweet, refreshing, delicious, and good for you. This creamy apple and cabbage slaw recipe is great anytime of year. Plus, it's low sugar, gluten-free, and dairy-free.

Makes 8 Servings

Ingredients

Dressing
3 tbsp mayonnaise
2 tbsp avocado oil
1 tsp apple cider vinegar
2 tsp lemon juice
1 tbsp minced fresh parsley
Salt and pepper to taste

Salad
½ small cabbage, shredded or thinly sliced
1 apple, cored and julienned (use Honeycrisp if you can)
¼ cup lightly chopped parsley
¼ cup sliced green onions
Salt and pepper to taste

Directions

Whisk all of the dressing ingredients together in a small jar or bowl. Set aside while you assemble the salad. Add the cabbage to a large bowl. Massage the cabbage with your hands to break it down a bit. Add the apple, parsley, and green onions to the bowl. Toss. Add the dressing to the bowl and mix with your hands. Add salt and pepper to taste and serve.
