Overview of Department Functions/Responsibilities:
The Omega kitchen is a large full-scale food production facility. It produces up to 2500 vegetarian and vegan meals per day as well as breads and desserts for both the Dining Hall and Café.
Job Description/daily tasks:
- Responsible for directly executing the meals.
- Work directly with Garde Manger and Bakery to have all components of the meal ready at the appropriate times.
- Communicate with the Dining Hall Shift Coordinator and Sous Chef to maintain the level of quality that is expected.
- Responsible for supervising the First Cook in all aspects of meal production and kitchen sanitation.
- Responsible for maintaining a clean and safe kitchen during their entire shift.
- Responsible for communication between the A.M. and P.M. shifts especially when dealing with items that require long cooking times and planning for upcoming meals. This will be done with the support of both Sous Chefs.
- Responsible for making sure that all recipe questions be directed to the Sous Chef, Executive Sous Chef and or the Executive Chef.
- Responsible for communicating in writing recipe changes (decided only by the Kitchen Management team) to office assistant at least two hours prior to family meal.
- Follow and make sure all staff members on their shift follow all New York State Department of Health laws and that all H.A.C.C.P. regulations for cooling and storage are being followed throughout the entire kitchen.
Requirements:
- Ability to work in support of the kitchen team.
- Professional kitchen experience and knowledge of vegetarian cuisine.
- Ability to lift up to 30 lbs. regularly, and up to 50 lbs. occasionally
